Saturday is totally the day for cleaning and organising things in my house. I normally eat whatever is left over in the fridge or freezer, but sometimes the fridge is basically empty. This time my husband came back from the supermarket with some chicken drumsticks. I was busy so I decided to put them in the oven, along with some spices for flavour. To match, I made a sweet potato puree and a salad from whatever was still left in the fridge. Voilà, a Saturday lunch meal to make cleaning easier.
- 6 chicken drumsticks
- 2 tbs oil
- 1 tbs vinegar
- ¼ tsp black pepper
- ¼ tsp chilli powder
- ¼ cumin powder
- ½ tbsp paprika powder
- ½ tbsp lemon pepper seasoning
- Preheat the oven to 250C.
- Mix all the ingredients and place the chicken drumsticks in a baking tray with baking paper and bake them for 20 min.
- Turn down the oven to 200C and turn over the chicken drumsticks, bake them for another 30 min.
