Baião de Dois Australian style

Baião de dois or Rubacão is Brazilian dish from the states in the north and the northeast, that is made from a mix of beans and rice. In some parts they add dry meat while in others they use halloumi.
My father and his part of the family are from the countryside of Bahia and he likes to call it rubacão. There, they eat this dish every Sunday when all the family comes to my grandmother’s house to have lunch.


  • 1 can pinto beans
  • 250g cooked rice
  • ½ onion, chooped
  • 3 garlic cloves, chopped
  • 1 chorizo, diced
  • 60g bacon, chopped
  • 180g halloumi, diced
  • 10g coriander
  • 10g parsley
  • salt to taste
  • black pepper to taste
  • paprika to taste
  • chilli flakes, optional


  1. Put the bacon in a pot and chorizo and fry it until its slightly gold, add onion and garlic.
  2. Add the halloumi and fry it a bit, then add the beans and rice and let it warm.
  3. Put together with the other ingredients and serve.
