Today I want to tell you a little about our Christmas celebrations in Brazil.
First of all, we celebrate Christmas on Christmas Eve 24th and we normally celebrate it at dinner time – around 8/9pm so that we still have time to go around to our neighbours’ houses and they have time to come to our house. At midnight ‘Santa’ comes and leaves all the gifts and we can either open them as soon as they are on the tree or do it the next morning.
The next day is one of the best days, because we have all the leftovers in the fridge and we just need to put them on the table. For salpicão we normally use the rest of the roasted chicken or roasted turkey and just add some extras into it. This is an easy fresh salad that’ll complement your other Christmas dishes.
- 450g cooked breast fillet chicken chicken, shredded
- 1 carrots, shredded
- 1 apple, diced
- Juice of 1 lemon
- 30g raisins
- ¼ red onion, diced
- 1/4 cup sour cream
- 3 tbsp mayonnaise
- ¼ cup corn
- ¼ cup olives
- ¼ cup pea
- 1 1/3 cups crunchy potato straws
- Parsley to taste
- Salt to taste
- Paprika to taste
- Cumin to taste
- If you are making this dish the next day with the leftover turkey or chicken, don’t worry about adding extra flavours.
- If you are making this from scratch, roast the chicken until well cooked and then shred it. Once shredded, add paprika, salt and cumin. Combine with the rest of the ingredients and serve.
