Healthy banana muffin

If you follow me on Instagram or Facebook, you probably already saw me saying that I want to make better choices when it comes to food this year. So you will probably see some more healthy recipes here. This is one of them.


  • 2 bananas, mashed
  • 1 egg
  • 1/4 olive oil or coconut oil
  • 1/3 cup almond milk
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Nuts, optional
  • 1/2 sliced banana, for the topping


  1. Preheat the oven to 180°C
  2. If you are not using a silicone mold, add cupcake paper on a cupcake pan.
  3. Put everything in a mixer and combine well.
  4. Transfer the mixture to the cupcake pan.
  5. Bake for about 30-40 minutes
  6. Leave to cool and top with the sliced banana.
