    Quick Thai Beef Curry

Thank you for your votes, everyone! If you don’t follow me on Instagram, I have been asking question about what you guys are interested in learning and I even have been posting videos of how to make some of the recipes that I have been posting here.Based on last night question’s you decided on the Quick Thai Beef Curry. As I’ve already shared there, last year my husband and I went to Thailand for our honeymoon and we learned how to make some Thai meals. The only problem with the class that everything was already cut and portioned beforehand, and all we had to do was put them in the…

Beef Lasagna – Lasanha de Carne

Normally in our house, it’s my husband who likes to cook lasagna and pasta sauces, but every now and then I give it a go: not to show him I can cook it better than him, but just so I don’t forget this kind of cooking. Back in Brazil I grew up thinking that lasagna was something fancy because my mum never really knew how to make it and because it was so different from what she usually made. Once in a while, my neighbour Lia would make some extra and bring it to me and my brother – we thought it was the most amazing thing in the world.…

    Quinoa and Kale Salad

Hey peeps, Last week on Instagram I commented that I had done a good job making healthy breakfast for a week, and because of that I would try to focus on lunch/dinner options in the future. Well, well, well, it was my birthday week last week and I totally lost track of my goal. I probably only ate one healthy meal. This week I’m already off to a good start and I’m very excited about the rest of the week. I’ll be eating this salad over two meals but it can actually serve up to four people. Today I ate it with pan-fried bass fish and tomorrow I’ll be eating…

    Mushroom Risotto

Risotto is one of the many delicious foods that the Italians created. It is so simple and tasty. When I say simple, I mean the process of making it. Everything is made in one pot, with simple ingredients and you can still make it extremely delicious and fancy to share with friends or for that special person. You can definitely make this restaurant dish at home and in fact my big tip is that you don’t need to kill yourself when you have people over. You can cook the rice with onion, wine and stock, leave it in the fridge for before hand, and on the day you have your…

    Plantain Banana Gnocchi

I love plantain banana, and back home we’re use to eat it cooked as it is or fried inside of pastel dough. I’m normally not much of  a fan of gnocchi, but since I found the plantain on Casa Ibérica I decide to give it a go. I really liked how it came out, but in my opinion it would be really nice to serve as a entree, since it still a bit sweet and can be overwhelming if it is served as a main. *At Casa Iberica, I found this plantain already cooked and frozen. I just defrosted it and put it in the food processor. Plantain Gnocchi Ingredients…

    Bobó de Camarão

Bobó de Camarão is like a prawn soup with a base of mashed cassava (or potato), coconut milk, palm oil and other ingredients. It’s normally served with white rice and farofa (a seasoning/mixture made from cassava flour or breadcrumbs and dendê oil). You can also find bobó de camarão in other parts of Brazil, but they replace the dendê oil for olive oil. If you are interested in how to make the farofa see the recipe below. Ingredients ½ kg potato (or cassava), puree ½ kg prawn uncooked juice from 1 lime ½ onion, chopped ¼ green capsicum, chopped 1 tomato, chopped 3 garlic cloves, chopped salt to taste black…

Carne de Panela – Beef Stew Brazilian Style

Carne de Panela is the ultimate Brazilian winter comfort food – it warms up the soul. Back home my stepfather sometimes cooks this after work on a Wednesday night, with some rice and pirão – a boiled cassava flour, similar to polenta. Another variation he does is galinha ensopada, which uses chicken instead of beef. He loves to cook this for Sunday lunch. The only problem is that my younger brother has been eating it for so many years, that now my mum ends up having to cook something different for him. Ingredients 1kg gravy beef, cut in cubes 1 onion, cubes 4 garlic cloves 1 tbsp paprika ½ tbsp…

    Roasted Chicken Drumsticks

Saturday is totally the day for cleaning and organising things in my house. I normally eat whatever is left over in the fridge or freezer, but sometimes the fridge is basically empty. This time my husband came back from the supermarket with some chicken drumsticks. I was busy so I decided to put them in the oven, along with some spices for flavour. To match, I made a sweet potato puree and a salad from whatever was still left in the fridge. Voilà, a Saturday lunch meal to make cleaning easier. Ingredients 6 chicken drumsticks 2 tbs oil 1 tbs vinegar ¼ tsp black pepper ¼ tsp chilli powder ¼…

    Vegetarian Quesadilla

I looove mexican food, or at least what I know of Mexican food from restaurants and websites written in English. A quesadilla is a simple, filling meal, made from a tortilla with a cheese filling, but I love how easy it is to add other ingredients.. My husband used to make this recipe but like he said, “You always steal my recipes and then make them better”. I hope you enjoy it. Quesadilla Ingredients Tortilla 400g red beans 1 cup mozzarella cheese 1 tbsp coriander 1 serve of salsa sauce (recipe below) guacamole sour cream Steps Mash the beans and mix with the salsa sauce, coriander and cheese. Put this…

    Cauliflower Pizza Base

I came across this cauliflower pizza base about 2 years and a half ago through my friend Isabella. She is all about healthy food and we had a girls night at my place, where each of us brought a dish for us to eat together at dinner. She cooked a pizza with a base that was a lot like this recipe and since then I’ve started making this healthy base. My friend Luciana showed me a similar recipe but with broccoli intead of cauliflower, I guess it will be my next flavour to try. You can put any topping, of course, my fat mind still makes me put lots of…
